I went with BC outdoor plywood due to cost, and used marine varnish to coat (3 coats on top side, 2 on bottom). I would have rather used epoxy, but the varnish was handy and less expensive. I'm very careful with boats and this one will see little water (some from day-to-day boating, none from rain).
