I had a Ted Williams that did this one time.
It turned out to be a bad reed valve. You might check that. Otherwise check to see that the carb float isn't hanging up.

The rev up indicates an increasing lean condition, right before shut out, so it's starving for fuel, you're on the right track.
Does this one have the "bubble" type pump in the carb or the old style flat pump on the outside of the carb. Maybe there's a pinhole you can't really see. I'd almost bet its the fuel pump.
