I agree with Dean that first he needs to confirm an actual overheat versus the possibility of a bad temp sensor or shorting alarm.

I recently read an article describing the same problem, where impeller, etc had been replaced, and ultimately the culprit was found to be a bad poppet valve. Evidently the poppet acts as sort of an ultra-high temp thermostat, and in the case in the article, had become corroded too much in the closed position.

I don't know if the 75 Merc even HAS a poppet valve, but the larger ones sure do.
